TROUT, SPINACH AND CREAM CHEESE SANDWICHES
450gm smoked trout, flaked
2 tsp grated lemon rind
2 tbsp lemon juice
1 tbsp dill
12 slices white sandwich bread
Tub light spreadable cream cheese
Combine trout, rind, juice and chopped dill in a bowl and mix well.
Spread one side of each slice of bread with cream cheese.
Divide trout mixture, then spinach leaves over half of the bread.
Top with remaining bread, cheese side facing down.
Cut off crusts if you come from the South island, cut into quarters and garnish with dill sprigs.
