Wine and Cheese Sauce Fish Recipe
Preheat oven to 350
White fish, filleted and cut into serving size pieces.
Chopped green, red, yellow peppers or what you have on hand
Medium dry white wine
Salt and pepper to taste
Lightly salt the fish and rub lightly with olive oil and place them in a baking dish. Drizzle a little wine on the fish. Let stand.
Sautee the onions, peppers etc. until soft and the onions become clear. Add spices.
Add the cheeses and melt them over low heat.
Add a little of the wine if too thick. Add sour cream and about 3/4 cup of wine. Stir until consistency that will pour.
Pour mixture over fish covering each piece carefully. Bake until the fish flakes easily with a fork. Add a light coating of Parmesan and turn oven to 250 for about 4 minutes or until they begin to brown. Watch carefully not to burn the cheese.
Serve hot with sides of your choice and the white wine.
