2 fillets salted cod
1 clove garlic, peeled and crushed
1 tsp thyme leaves
2 spring onions, sliced
½ tsp crushed chilli
Soak salted cod in milk for a few hours to remove saltiness, and remove flesh from bones. Mix together flour and enough milk to form a soft dough.
Mix in eggs, garlic, thyme, spring onions and chilli. Make fritters into small balls and deep fry.
Serve as a starter with cocktails.
Note: Prawns, lobster or crab can also be used in this recipe.
